It's been a busy couple of weeks here in the restaurant, as well as working with the young stars from our Seren Academy.  My latest visit was at Coleg Sir Gar, Carmarthen where I spent the day with a group of young students.  The college run a course as part of their Young Chefs Academy for students between the age of 13 - 15 who are still at school and are interested in going to college to study catering when they finish school or who are just really keen at cooking.

I hosted a session as a guest chef and demonstrated a dish, stage by stage and then the students recreated what I did. The dish I decided to prepare with the students was parsnip, banana and chocolate muffins. I actually invented this recipe as part of my dessert I prepared last time I was on Great British Menu. It's a cross between chocolate and banana bread and carrot cake but made with parsnips instead. The parsnips and bananas add a lovely natural sweetness to the muffins, it really works well and tastes great. I think the students enjoyed having me as a guest chef and they definitely were impressed with their own efforts and it was an added bonus they could take home what they had created.
