As it's the festive season I thought I'd share with you one of my favourite recipes for  this time of year. (And you'll be pleased to know it's not another chef telling you their top tip for cooking the turkey left overs!)   It's a recipe for a festive alcoholic drink that you and your friends can enjoy over and over at any occasion, my Festive Mulled Cider.
  • 1 litre Dry cider
  • 115g Soft dark brown sugar
  • 1 Lemon
  • 1 Orange
  • 1 Cinnamon stick
  • 8 Whole cloves
  • 6 Whole star anise
  • 1 knob Fresh root ginger
  • 6 Whole all spice
  • 10 Whole black peppercorns
  • 1 Vanilla pod
  • Dark rum (optional)
  • Remove the zest from the orange and lemon with a vegetable peeler and squeeze  the juice out.
  • Peel and roughly chop the ginger.
  • Split the vanilla pod lengthways and scrape out the seeds.
  • Place all the ingredients in a large saucepan including the dry cider, cover with a lid and warm over a low heat until the sugar has dissolved. You don't want to boil the mulled cider as this will destroy the flavour and (more importantly) evaporate the alcohol!
  • Leave to infuse for a minimum of 30 minutes if you can wait that long!
  • Pass the mulled cider through a fine sieve and serve warm.
  • For an optional extra add a shot of dark rum to each glass.
This is not only very nice but also very dangerous so be careful how many you drink! Enjoy and Happy New Year!
